New Year’s Eve Prix Fixe Menu

A four-course dining experience curated by Michelin-trained Chef Wyl Lima

Winter Salad: Mixed Greens, Goat Cheese, Pepita, Mustard Vinaigrette

Rooted in European winter market cooking, this salad balances crisp mixed greens with creamy goat cheese and toasted pepitas for warmth and texture. A classic mustard vinaigrette ties it together, highlighting the season’s simplicity through contrast and restraint.

Wagyu Bolognese: Gemelli, Toasted Breadcrumbs

Inspired by Northern Italy’s classic ragù, this dish pairs gemelli pasta with a rich Wagyu Bolognese, where Japanese Wagyu adds depth through natural marbling. Toasted breadcrumbs nod to cucina povera, bringing texture and tradition to a refined, modern take on an Italian staple.

Roasted Chicken: Sweet Plantain, Mediterranean Chutney, Pickled Peppers

A cross-continental dialogue between Africa, the Caribbean, and the Mediterranean. Sweet plantains, deeply rooted in West and Central African diets, traveled the Atlantic trade routes and became a staple in Caribbean cooking. Mediterranean chutney adds savory depth, while pickled peppers tie back to Iberian preservation traditions. The roasted chicken becomes a global centerpiece, embodying comfort, migration, and resilience.

Matcha Cheesecake: Matcha Mousse, Strawberries, Graham Crackers

This dessert blends Japanese tea culture with classic American cheesecake. Earthy matcha mousse brings depth and balance, strawberries add brightness, and graham crackers ground the dish in familiar comfort—an elegant meeting of tradition and indulgence.
